Apple and Cheddar Quesadilla

Ingredients
  

  • 1 apple thinly sliced
  • 1 cup shredded sharp cheddar cheese
  • 2 large flour tortillas
  • Cooking spray or a small amount of butter

Method
 

  1. Heat a non-stick skillet over medium heat and lightly coat with cooking spray or butter.
  2. Place one flour tortilla in the skillet.
  3. Spread half of the shredded sharp cheddar cheese evenly over the tortilla.
  4. Arrange the thin apple slices evenly over the cheese.
  5. Sprinkle the remaining sharp cheddar cheese over the apple slices.
  6. Cover with the second flour tortilla.
  7. Cook until the bottom tortilla is golden brown and the cheese is melted, about 3-4 minutes.
  8. Carefully flip the quesadilla using a spatula, and cook the other side until golden brown, about 2-3 minutes.
  9. Remove from the skillet and let it cool for a minute before cutting into wedges.
  10. Pack in a lunchbox with a side of honey or caramel dip for an extra treat.
