Apfelstrudel

Delicate pastry encasing spiced apples, raisins, and buttery breadcrumbs.

Servings: 8 slices

Ingredients
  

  • 1 sheet puff pastry thawed
  • 4 cups apples peeled and sliced
  • 1/3 cup sugar
  • 1 tsp ground cinnamon
  • 1/3 cup raisins
  • 1/2 cup breadcrumbs
  • 3 tbsp butter melted
  • 1 egg beaten

Method
 

  1. Toss the sliced apples with sugar, cinnamon, and raisins and let them sit 10 minutes.
  2. Toast the breadcrumbs in a little of the melted butter until golden.
  3. Roll out the pastry, sprinkle with the breadcrumbs, then pile the apple mixture down the center.
  4. Fold in the ends and roll up the strudel, then brush all over with beaten egg and melted butter.
  5. Bake at 375F for 30-35 minutes until deep golden and crisp, then dust with powdered sugar.

Notes

Toasted breadcrumbs soak up juices and keep the bottom from going soggy.
