Almond Flour Sugar-Free Holiday Brownies

Ingredients
  

  • 2 cups almond flour
  • ¾ cup unsweetened cocoa powder
  • ¾ cup granulated erythritol or monk fruit sweetener
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 3 large eggs
  • ½ cup melted coconut oil or butter
  • 2 teaspoons vanilla extract
  • ½ cup sugar-free chocolate chips optional

Method
 

  1. Preheat your oven to 350°F and line an 8x8-inch baking pan with parchment paper.
  2. In a large bowl, whisk together almond flour, cocoa powder, sweetener, baking soda, and salt until well combined.
  3. In a separate bowl, beat eggs, melted coconut oil, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and mix until just combined. Fold in chocolate chips if using.
  5. Pour batter into prepared pan and smooth the top with a spatula.
  6. Bake for 23-25 minutes until edges are set but center is still slightly soft. A toothpick should come out with a few moist crumbs.
  7. Let cool completely in the pan before cutting into 16 squares. These brownies will firm up as they cool.
