Air Fryer Zucchini Fritter Holiday Appetizers

These crispy, golden fritters are a great way to sneak in some veggies during the holiday indulgence (we all need that balance, right?). The air fryer makes them perfectly crunchy without all the oil, and they're so flavorful your guests won't even realize they're eating their greens. Serve them with a dollop of sour cream and watch them disappear!

Ingredients
  

  • 3 medium zucchini grated (about 4 cups)
  • 1 teaspoon salt plus more to taste
  • 2 large eggs beaten
  • 1/2 cup all-purpose flour
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 green onions finely chopped
  • 2 cloves garlic minced
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • Cooking spray
  • 1 cup sour cream for serving
  • 2 tablespoons fresh dill chopped (for garnish)

Method
 

  1. Place grated zucchini in a colander and sprinkle with 1 teaspoon of salt. Let sit for 10 minutes to draw out moisture.
  2. Using a clean kitchen towel or cheesecloth, squeeze out as much liquid as possible from the zucchini. This step is crucial for crispy fritters, so really wring it out!
  3. In a large bowl, combine the squeezed zucchini, eggs, flour, Parmesan, mozzarella, green onions, garlic, black pepper, onion powder, and paprika. Mix until well combined.
  4. Preheat your air fryer to 375°F for 3 minutes.
  5. Line the air fryer basket with parchment paper and spray lightly with cooking spray.
  6. Scoop about 2 tablespoons of the mixture for each fritter and form into patties about 1/2 inch thick. Place in the air fryer basket, leaving space between each one.
  7. Spray the tops of the fritters lightly with cooking spray.
  8. Air fry for 12-15 minutes, flipping halfway through, until golden brown and crispy on both sides.
  9. Transfer to a serving platter, garnish with fresh dill, and serve warm with sour cream for dipping.
