Ingredients
  

  • 2 large sweet potatoes sliced into 1/2-inch rounds
  • 2 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 4 oz goat cheese softened
  • 1/4 cup dried cranberries chopped
  • 1/4 cup pecans toasted and chopped
  • 2 tbsp honey
  • Fresh thyme leaves for garnish

Method
 

  1. Wash and slice sweet potatoes into 1/2-inch thick rounds. Pat them dry with paper towels.
  2. Toss sweet potato rounds with olive oil, salt, and pepper in a large bowl until evenly coated.
  3. Preheat air fryer to 380°F. Arrange sweet potato rounds in a single layer in the basket (work in batches if necessary).
  4. Air fry for 18-20 minutes, flipping halfway through, until tender and lightly golden around the edges.
  5. While sweet potatoes cook, mix together goat cheese, chopped cranberries, and chopped pecans in a small bowl.
  6. Remove sweet potato rounds from air fryer and arrange on a serving platter.
  7. Top each round with a small dollop of the goat cheese mixture.
  8. Drizzle with honey and garnish with fresh thyme leaves. Serve warm or at room temperature.
