Ingredients

  • 16 large white button mushrooms
  • 8 oz cream cheese softened
  • 1/2 cup shredded Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 cloves garlic minced
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil spray

Method

  1. Clean mushrooms with a damp paper towel. Remove stems and gently scoop out the gills with a spoon to create more room for filling.
  2. Finely chop the mushroom stems and set aside.
  3. In a medium bowl, combine cream cheese, Parmesan, breadcrumbs, garlic, chopped mushroom stems, parsley, Italian seasoning, salt, and pepper. Mix until well combined.
  4. Generously fill each mushroom cap with the cream cheese mixture, mounding it slightly.
  5. Preheat air fryer to 350°F for 3 minutes.
  6. Spray the air fryer basket lightly with olive oil. Place stuffed mushrooms in a single layer in the basket.
  7. Air fry at 350°F for 8-10 minutes, until mushrooms are tender and the tops are golden brown.
  8. Let cool for 3-5 minutes before serving. Garnish with extra fresh parsley if desired.
