In a large skillet over medium-high heat, cook ground pork until browned and crumbly, about 5-6 minutes. Drain excess fat.
Add garlic and ginger to the skillet and cook for 1 minute until fragrant. Add cabbage, carrots, and green onions. Cook for 3-4 minutes until vegetables are softened.
Stir in soy sauce, sesame oil, and sugar. Cook for another 2 minutes. Remove from heat and let the filling cool completely.
Place an egg roll wrapper on a clean surface with one corner pointing toward you (diamond shape). Place 2-3 tablespoons of filling in the center.
Fold the bottom corner over the filling, then fold in the left and right corners. Roll tightly toward the top corner. Use a bit of water to seal the edge. Repeat with remaining wrappers and filling.
Preheat air fryer to 390°F. Lightly spray or brush egg rolls with oil on all sides.
Place egg rolls in a single layer in the air fryer basket, making sure they don't touch. Cook in batches for 12-15 minutes, flipping halfway through, until golden brown and crispy. Serve hot with your favorite dipping sauce!
