Air Fryer Coconut Shrimp Holiday Appetizers

Transport your guests to the tropics with these golden, crispy coconut shrimp! They're fancy enough for your holiday spread but so easy that you'll actually enjoy the party instead of being stuck in the kitchen. Serve with sweet chili sauce and watch them become the star of your appetizer spread!

Ingredients
  

  • 1 lb large shrimp peeled and deveined (tails on)
  • 1/2 cup all-purpose flour
  • 2 large eggs beaten
  • 1 1/2 cups sweetened shredded coconut
  • 1 cup panko breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • Cooking spray
  • Sweet chili sauce for dipping

Method
 

  1. Pat shrimp completely dry with paper towels. This is key for getting that crispy coating!
  2. Set up three shallow bowls: one with flour, one with beaten eggs, and one with coconut, panko, garlic powder, paprika, and salt mixed together.
  3. Holding each shrimp by the tail, dredge in flour, shaking off excess.
  4. Dip in egg, letting excess drip off, then press into the coconut mixture, coating well on both sides.
  5. Place coated shrimp on a plate and lightly spray both sides with cooking spray.
  6. Preheat air fryer to 400°F. Arrange shrimp in a single layer in the basket, working in batches if needed.
  7. Air fry for 8-10 minutes, flipping halfway through, until golden brown and shrimp are cooked through.
  8. Serve immediately with sweet chili sauce or your favorite dipping sauce. These are best enjoyed hot!
