Set up three shallow bowls: one with flour, one with beaten eggs, and one with coconut, panko, garlic powder, paprika, and salt mixed together.
Holding each shrimp by the tail, dredge in flour, shaking off excess.
Dip in egg, letting excess drip off, then press into the coconut mixture, coating well on both sides.
Place coated shrimp on a plate and lightly spray both sides with cooking spray.
Preheat air fryer to 400°F. Arrange shrimp in a single layer in the basket, working in batches if needed.
Air fry for 8-10 minutes, flipping halfway through, until golden brown and shrimp are cooked through.
