In a medium bowl, whisk together all marinade ingredients until well combined.
Add chicken strips to the marinade, toss to coat, cover, and refrigerate for at least 2 hours or up to overnight.
While chicken marinates, make the peanut sauce by whisking together all sauce ingredients until smooth. Add water 1 tablespoon at a time if needed to reach desired consistency. Set aside.
Thread marinated chicken strips onto soaked skewers, weaving them back and forth.
Preheat air fryer to 400°F. Spray the basket lightly with cooking spray.
Place skewers in a single layer in the air fryer basket (work in batches). Make sure skewer ends don't touch the heating element.
Air fry for 10-12 minutes, flipping halfway through, until chicken is cooked through and slightly charred on the edges (internal temperature should reach 165°F).
Arrange skewers on a serving platter and serve warm with peanut sauce for dipping. Garnish with chopped peanuts and cilantro if desired.
