Air Fryer Chicken Satay Skewer Appetizers

These chicken satay skewers bring all the flavors of your favorite Thai restaurant right to your holiday party! The air fryer makes the chicken perfectly juicy on the inside with those gorgeous char marks on the outside. Paired with a creamy peanut sauce, these skewers will transport your guests straight to a tropical paradise (even if there's snow outside!).

Ingredients
  

  • 1.5 lbs boneless skinless chicken thighs cut into 1-inch strips
  • 16 wooden skewers soaked in water for 30 minutes
  • For the marinade:
  • 1/4 cup coconut milk
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic minced
  • 1 tbsp curry powder
  • 1 tsp ground turmeric
  • For the peanut sauce:
  • 1/2 cup creamy peanut butter
  • 1/4 cup coconut milk
  • 2 tbsp lime juice
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp sriracha optional

Method
 

  1. In a medium bowl, whisk together all marinade ingredients until well combined.
  2. Add chicken strips to the marinade, toss to coat, cover, and refrigerate for at least 2 hours or up to overnight.
  3. While chicken marinates, make the peanut sauce by whisking together all sauce ingredients until smooth. Add water 1 tablespoon at a time if needed to reach desired consistency. Set aside.
  4. Thread marinated chicken strips onto soaked skewers, weaving them back and forth.
  5. Preheat air fryer to 400°F. Spray the basket lightly with cooking spray.
  6. Place skewers in a single layer in the air fryer basket (work in batches). Make sure skewer ends don't touch the heating element.
  7. Air fry for 10-12 minutes, flipping halfway through, until chicken is cooked through and slightly charred on the edges (internal temperature should reach 165°F).
  8. Arrange skewers on a serving platter and serve warm with peanut sauce for dipping. Garnish with chopped peanuts and cilantro if desired.
