Pat shrimp dry with paper towels. Set up three shallow bowls: one with flour, one with beaten eggs, and one with panko mixed with salt and pepper.
Dredge each shrimp in flour, shaking off excess, then dip in egg, and finally coat with panko mixture, pressing gently to adhere.
Spray air fryer basket with cooking spray. Arrange shrimp in a single layer, making sure they don't touch. Spray tops of shrimp generously with cooking spray.
Air fry at 400°F for 8-10 minutes, flipping halfway through, until shrimp are golden and crispy.
While shrimp cook, whisk together mayonnaise, sweet chili sauce, sriracha, and honey in a large bowl until smooth.
Transfer cooked shrimp to the bowl with sauce and toss gently to coat. Arrange on a serving platter and garnish with sliced green onions. Serve immediately with extra sauce on the side.
