Air Fryer Baked Potato Skin Appetizers

These crispy potato skins are pure party magic, and your air fryer makes them so much easier than the traditional oven method! They're loaded with all the good stuff—cheese, bacon, and sour cream—and they'll disappear faster than you can say "make another batch." Trust me, you'll want to double this recipe because everyone always wants seconds!

Ingredients
  

  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • cups shredded cheddar cheese
  • 8 slices bacon cooked and crumbled
  • ½ cup sour cream
  • 2 green onions thinly sliced

Method
 

  1. Poke potatoes several times with a fork, then air fry at 400°F for 35-40 minutes until tender. Let cool for 10 minutes.
  2. Cut each potato in half lengthwise and scoop out most of the flesh, leaving about ¼ inch of potato attached to the skin. Save the scooped potato for another use.
  3. Brush both sides of potato skins with olive oil and season with garlic powder, salt, and pepper.
  4. Place potato skins in air fryer basket skin-side down and cook at 375°F for 5 minutes until crispy.
  5. Flip skins over, fill with shredded cheese and crumbled bacon, then air fry for 3-4 minutes until cheese melts.
  6. Remove from air fryer and top each skin with a dollop of sour cream and sprinkle with green onions. Serve immediately.
