Servings: 4 servings

Ingredients

  • 3 large ripe but firm avocados
  • 1/2 cup all-purpose flour
  • 2 large eggs beaten
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray
  • Ranch or cilantro lime dipping sauce for serving

Method

  1. Cut avocados in half, remove the pit, and peel. Slice each half into 4 wedges, creating thick fry-shaped pieces.
  2. Set up three shallow bowls: one with flour, one with beaten eggs, and one with panko mixed with Parmesan, garlic powder, paprika, salt, and pepper.
  3. Coat each avocado wedge first in flour, shaking off excess, then dip in egg, and finally press into the panko mixture to coat completely.
  4. Place coated avocado fries on a plate and spray generously with cooking spray on all sides.
  5. Preheat air fryer to 400°F. Arrange fries in a single layer in the basket, making sure they don't touch.
  6. Air fry for 10-12 minutes, carefully flipping halfway through, until golden brown and crispy on the outside.
  7. Serve immediately while hot and crispy with your favorite dipping sauce. These are best eaten fresh!
