9. Slow Cooker Corn Chowder

Sweet corn and salty bacon are a match made in heaven. This chowder is thick, sweet, savory, and incredibly comforting.
Servings: 4 servings

Ingredients
  

  • 1 bag 16 ounces frozen sweet corn
  • 3 russet potatoes peeled and diced
  • 1 small onion finely chopped
  • 4 cups chicken broth
  • 1/2 teaspoon smoked paprika
  • 1 cup heavy cream
  • 6 slices bacon cooked and crumbled

Method
 

  1. Place the frozen corn, diced potatoes, onion, chicken broth, and smoked paprika into the slow cooker.
  2. Cover and cook on low for 6 hours until the potatoes are tender.
  3. Use an immersion blender to blend just a small portion of the soup to thicken it, leaving most of it chunky.
  4. Stir in the heavy cream and crumbled bacon, and let it heat through for 10 minutes.
