9) Mini Flourless Chocolate Torte

Dense, fudgy, and just rich enough that one ramekin is exactly the right amount. This is what I make when I want something serious without fussing over flour.

Ingredients
  

  • 6 oz bittersweet chocolate chopped
  • 4 tbsp unsalted butter
  • 3 large eggs
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • Cocoa powder for dusting

Method
 

  1. Preheat oven to 350°F. Grease four 4-inch ramekins and dust with cocoa.
  2. Melt chocolate and butter in a heatproof bowl over simmering water, stirring until smooth.
  3. Whisk eggs, sugar, vanilla, and salt until slightly thickened.
  4. Fold melted chocolate into egg mixture until combined.
  5. Divide batter among ramekins and bake 12–14 minutes until edges set and centers jiggle slightly.
  6. Cool 10 minutes, then invert onto plates. Dust with cocoa and serve.
