9. Mango Tart with Store-Bought Puff Pastry

This is my favorite trick for looking like a baking genius with zero effort. Store-bought puff pastry is a busy mom's best friend.

Ingredients
  

  • 1 sheet frozen puff pastry thawed
  • 4 oz cream cheese softened
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 ripe mangoes peeled and thinly sliced
  • 1 tablespoon honey

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. Unroll the thawed puff pastry onto the baking sheet. Score a one-inch border around the edges with a knife, being careful not to cut all the way through.
  3. In a small bowl, mix the cream cheese, powdered sugar, and vanilla extract until smooth.
  4. Spread the cream cheese mixture inside the scored border of the pastry.
  5. Arrange the mango slices beautifully over the cream cheese.
  6. Bake for 18 to 20 minutes until the pastry edges are puffed and golden brown.
  7. Drizzle the warm tart with honey before slicing and serving.
