9) Crispy Buttermilk Fried Wings with Ranch

Ingredients
  

  • 2 1/2 lbs chicken wings tips removed and joints separated
  • 2 cups buttermilk
  • 1 tsp hot sauce optional
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt plus more to taste
  • 1/2 tsp black pepper
  • Vegetable oil for frying about 4 cups
  • 1 cup ranch dressing for serving

Method
 

  1. Toss wings with buttermilk and hot sauce in a bowl, cover, and refrigerate at least 2 hours or overnight.
  2. Mix flour, baking powder, paprika, garlic powder, onion powder, salt, and pepper in a large bowl.
  3. Heat oil in a deep pot to 350°F (175°C). Dredge wings in the flour mixture, pressing to coat well.
  4. Fry wings in batches 8–10 minutes until golden and internal temp reaches 165°F, turning once. Drain on a rack.
  5. Serve warm with ranch for dunking.
