9) Chilled Sesame Soba Noodle Cups

Portioning these into individual cups was the game-changer for me. One big bowl of noodles at a potluck is always a mess. People dig around, the sauce pools at the bottom, and by the time everyone gets some, it looks rough. Cups solve all of that.

Ingredients
  

  • 8 oz soba noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1 cup shredded carrots
  • 1 cup thin-sliced cucumber
  • 2 green onions sliced
  • 1 tablespoon sesame seeds

Method
 

  1. Cook the soba noodles according to the package. Drain and rinse under cold water.
  2. In a small bowl, whisk soy sauce, sesame oil, rice vinegar, and honey.
  3. Toss noodles with the sauce, carrots, cucumber, and green onions.
  4. Spoon into small cups and sprinkle sesame seeds on top. Chill until ready to pack.
