8. White Chocolate Macadamia Nut Cookies

These feel a little fancy but are incredibly easy to throw together on a Tuesday night. The salty crunch of the nuts balances the sweet white chocolate perfectly.

Ingredients
  

  • 1/2 cup unsalted butter softened
  • 1/2 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup white chocolate chips
  • 1/2 cup chopped macadamia nuts

Method
 

  1. Preheat oven to 350°F.
  2. Beat the butter, brown sugar, and granulated sugar until smooth.
  3. Add the egg and vanilla extract, mixing well.
  4. Stir in the flour, baking soda, and salt until just combined.
  5. Fold in the white chocolate chips and chopped macadamia nuts.
  6. Drop spoonfuls of dough onto a baking sheet.
  7. Bake for 10 to 12 minutes. Cool on the pan for a few minutes before transferring to a wire rack.
