Method
- Pat pork dry and place it on top of the sliced onion in the slow cooker.
- Whisk maple syrup, Dijon, vinegar, thyme, garlic powder, salt, and pepper; pour over pork.
- Add chicken broth around the edges, not over the pork, to keep sauce glossy.
- Cook on LOW for 6–8 hours or HIGH for 3–4 hours until pork reaches 145°F and is tender.
- Remove pork, rest 5 minutes, slice, and spoon sauce and onions over top.
