8) Italian Antipasto Skewers

No fork required. That detail matters more than people give it credit for, especially at a tailgate where someone is holding a drink and wearing a jersey. Everything stays pinned in place, and I can stack these in a container the night before without anything shifting.

Total Time 15 minutes
Servings: 12 servings

Ingredients

  • 24 slices salami
  • 12 oz provolone cheese cut into 1-inch cubes
  • 24 small pepperoncini peppers drained
  • 1 cup cherry tomatoes
  • 12 large green olives
  • 12 wooden skewers 6-inch
  • 2 tablespoons Italian dressing

Method

  1. Lay out all ingredients so you can build fast.
  2. Thread salami (folded), provolone, tomato, olive, and pepperoncini onto each skewer.
  3. Repeat until skewers are full but not crowded.
  4. Brush lightly with Italian dressing.
  5. Chill for 30 minutes or pack right away in a tight container.
