8) Greek Spiced Beef Pitas with Tzatziki

Ingredients
  

  • 1 lb ground beef 85/15
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tbsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp salt 1/4 tsp black pepper
  • 4 pita pockets
  • 1 cup shredded lettuce or mixed greens
  • 1 medium tomato diced
  • 1 cucumber half grated and squeezed dry; half thinly sliced
  • 1 cup plain Greek yogurt
  • 1 tsp lemon juice
  • 1/4 tsp dried dill

Method
 

  1. Heat oil in a skillet over medium-high heat; sauté onion until soft, 3–4 minutes. Add garlic and cook 30 seconds.
  2. Add the ground beef and cook, breaking it up with a spoon, until it reaches 160°F (71°C), about 6 to 8 minutes.
  3. Stir in oregano, cumin, paprika, salt, and pepper; cook 1–2 minutes to toast spices.
  4. Warm the pitas in a dry pan or oven. For the tzatziki, mix the Greek yogurt with the grated, squeezed-dry cucumber half, lemon juice, dried dill, and a pinch of the listed salt.
  5. Stuff pitas with beef, greens, tomato, cucumber slices, and a generous spoonful of tzatziki.
