7) Sheet-Pan Tex-Mex Nacho Bake

Ingredients
  

  • 1 lb ground beef
  • 1 packet 1 oz taco seasoning
  • 12 oz bag tortilla chips
  • 2 cups shredded cheddar or Mexican blend
  • 1 cup canned black beans drained and rinsed
  • 1 cup corn kernels frozen and thawed or canned
  • 1 small red onion thinly sliced
  • 1 –2 jalapeños sliced (optional)
  • 1 cup pico de gallo or chopped tomatoes
  • 1/2 cup sliced black olives optional
  • 1/2 cup sour cream or Greek yogurt for serving
  • 1/4 cup chopped cilantro for garnish
  • Lime wedges for serving
  • Olive oil or cooking spray

Method
 

  1. Preheat oven to 425°F. Brown ground beef in a skillet, drain, and stir in taco seasoning with 1/4 cup water until saucy.
  2. Spread tortilla chips on a rimmed sheet pan and drizzle lightly with oil or spray.
  3. Scatter seasoned beef evenly over chips, then add black beans, corn, onion, jalapeños, and olives.
  4. Sprinkle cheese over everything and bake 8–10 minutes until cheese melts and edges are toasty.
  5. Top with pico, cilantro, sour cream, and lime wedges before serving.
