7. Oatmeal Raisin Cookies

A hearty, chewy cookie that feels just a little bit like breakfast. These hold their shape beautifully in a crowded cookie jar.

Ingredients
  

  • 1/2 cup unsalted butter softened
  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups rolled oats
  • 1 cup raisins

Method
 

  1. Preheat oven to 350°F.
  2. Cream the butter, brown sugar, and granulated sugar together.
  3. Beat in the egg and vanilla.
  4. In a separate bowl, whisk the flour, baking soda, cinnamon, and salt. Add to the wet mixture.
  5. Stir in the oats and raisins.
  6. Drop rounded tablespoons of dough onto a baking sheet.
  7. Bake for 10 to 12 minutes until the edges are golden brown.
