7) Apple-Cranberry Pork Chops

Ingredients
  

  • 4 boneless pork chops about 1.5 lb
  • 2 cups apple slices about 2 medium apples, peeled and cored
  • 1 cup fresh or frozen cranberries
  • 1/2 cup apple cider or apple juice
  • 2 tbsp brown sugar
  • 1 tsp Dijon mustard
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp cornstarch mixed with 2 tbsp cold water

Method
 

  1. Pat pork chops dry and season with salt and pepper. Brown in a skillet 2 minutes per side if you have time.
  2. Place chops in the crockpot and top with apple slices and cranberries.
  3. Whisk cider, brown sugar, Dijon, and cinnamon; pour over chops.
  4. Cook on low 4–5 hours or high 2–3 hours until pork reaches 145°F.
  5. Remove chops and stir cornstarch mixture into sauce. Cook on high 5–10 minutes to thicken.
  6. Slice chops and spoon sauce over them before serving.
