- Pat pork chops dry and season with salt and pepper. Brown in a skillet 2 minutes per side if you have time.
- Place chops in the crockpot and top with apple slices and cranberries.
- Whisk cider, brown sugar, Dijon, and cinnamon; pour over chops.
- Cook on low 4–5 hours or high 2–3 hours until pork reaches 145°F.
- Remove chops and stir cornstarch mixture into sauce. Cook on high 5–10 minutes to thicken.
- Slice chops and spoon sauce over them before serving.
