6) Tuna Noodle Casserole with Lemon, Dill, and Capers

Ingredients
  

  • 12 oz egg noodles cooked and drained
  • 2 5 oz cans tuna in water, drained
  • 1 cup frozen peas
  • 1 cup plain Greek yogurt
  • 1/2 cup mayonnaise
  • 2 tbsp capers drained
  • 2 tbsp fresh dill chopped
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup panko breadcrumbs
  • 2 tbsp butter melted

Method
 

  1. Preheat oven to 375°F. Grease a 9x13-inch baking dish.
  2. Mix yogurt, mayo, lemon zest, lemon juice, dill, salt, and pepper in a bowl.
  3. Fold tuna, peas, and cooked noodles into the sauce until even.
  4. Transfer to dish and sprinkle capers on top.
  5. Combine panko and melted butter; sprinkle over casserole.
  6. Bake 20–25 minutes until edges bubble and top is golden.
