6. Strawberry Pop-Tart Cookies

A fun nostalgic treat that looks amazing in a lunchbox. They are surprisingly easy to assemble and always get a big reaction from the kids.

Ingredients
  

  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/3 cup strawberry jam
  • 1/2 cup powdered sugar
  • 1 tablespoon milk
  • Rainbow sprinkles

Method
 

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Beat the butter and sugar until fluffy. Add the egg and vanilla.
  3. Mix in the flour and baking powder to form a soft dough.
  4. Roll the dough into balls and place on a baking sheet. Flatten each ball slightly and use your thumb to make a shallow indent in the center.
  5. Fill each indent with a small scoop of strawberry jam.
  6. Bake for 10 to 12 minutes. Let cool completely.
  7. Whisk the powdered sugar and milk together to make a glaze. Drizzle over the cooled cookies and top with sprinkles.
