6. Slow Cooker Chicken and Brown Rice

On tournament Saturdays, I plug in my slow cooker before we leave the house. Coming home to a hot meal after hours in the sun is a true blessing.
Servings: 4 servings

Ingredients
  

  • 1.5 lbs boneless skinless chicken breasts
  • 1 cup uncooked brown rice
  • 2.5 cups chicken broth
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1/2 cup yellow onion diced
  • 1 teaspoon poultry seasoning

Method
 

  1. Spray the inside of your slow cooker with nonstick cooking spray.
  2. Place the chicken breasts at the bottom of the slow cooker.
  3. Add the uncooked brown rice, carrots, celery, and onion.
  4. Sprinkle the poultry seasoning over the top, then pour in the chicken broth.
  5. Cover and cook on high for 3 to 4 hours, or on low for 6 to 7 hours, until the rice is tender and the chicken is cooked through.
  6. Shred the chicken directly in the slow cooker using two forks, stir well, and serve.
