Heat the oven to 375°F. Warm the oil in a large oven-safe skillet over medium heat.
Add the onion and beef. Cook until the beef browns, breaking it apart as it cooks. Drain extra grease, then season with salt and pepper.
Stir in the sloppy joe sauce and simmer for 3 minutes.
Sprinkle the cheese over the beef mixture. Arrange the biscuits on top.
Bake for 18 to 22 minutes, until the biscuits turn golden and cook through. Let it rest for 5 minutes before serving so nobody burns the roof of their mouth.
