Ingredients

  • 2 lbs bone-in skin-on chicken thighs (6-8 pieces)
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup honey
  • 3 cloves garlic minced
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp grated fresh ginger optional
  • 1 tbsp cornstarch + 2 tbsp water slurry
  • 1 tbsp vegetable oil
  • 1-2 tsp sriracha or chili paste optional
  • 1 tbsp toasted sesame seeds
  • 2 green onions sliced

Method

  1. Pat chicken dry and season lightly with salt and pepper.
  2. Heat oil in a large skillet over medium-high and brown thighs skin-side down, 5–6 minutes. Flip and cook 3 minutes. Remove to a plate.
  3. Lower heat to medium; add garlic and ginger, cook 30 seconds until fragrant.
  4. Whisk soy sauce, honey, rice vinegar, sesame oil, and sriracha into the skillet. Simmer 1–2 minutes.
  5. Stir in cornstarch slurry and cook until sauce thickens. Return chicken, spoon glaze over thighs, cover and simmer 8–10 minutes until cooked through.
  6. Sprinkle sesame seeds and green onions before serving.
