6. Double Chocolate Brownie Cookies

When you cannot decide between a brownie and a cookie, make these. They are rich, fudgy, and look great in a glass jar.

Ingredients
  

  • 1/2 cup unsalted butter
  • 1 cup semi-sweet chocolate chips divided
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Method
 

  1. Preheat oven to 350°F.
  2. Melt the butter and 1/2 cup of the chocolate chips in the microwave in 30-second intervals until smooth. Let cool slightly.
  3. In a separate bowl, whisk the sugar, eggs, and vanilla together. Stir in the melted chocolate mixture.
  4. Fold in the flour, cocoa powder, baking powder, and salt.
  5. Stir in the remaining 1/2 cup of chocolate chips.
  6. Drop spoonfuls of dough onto a parchment-lined baking sheet.
  7. Bake for 10 minutes. The centers will look soft but will set as they cool.
