6) Cookie Dough Core Ice Cream Cake (Chunks of cookie dough in the middle)

Ingredients
  

  • 1 quart vanilla ice cream slightly softened
  • 1 cup packaged refrigerated chocolate chip cookie dough labeled safe to eat raw chopped into 1/2-inch pieces
  • 1 9-inch ready-made chocolate cake layer or brownie cooled
  • 1 cup whipped cream or whipped topping
  • 2 tbsp chocolate syrup optional

Method
 

  1. Line a 9-inch springform pan with plastic wrap. Press cake or brownie into the bottom.
  2. Fold cookie dough pieces into softened ice cream. Work quickly so it doesn't melt.
  3. Spoon ice cream mixture over the cake layer, smoothing the top. Cover with plastic wrap.
  4. Freeze at least 4 hours or overnight until very firm.
  5. Remove from pan, top with whipped cream and chocolate syrup. Slice with a warm knife.
