6) Banana-Foster Skillet-Style French Toast Bake

Warm caramel, soft bananas, and custardy bread cooked in a single skillet. This one looks impressive coming out of the oven, which I appreciate on a slow morning when I haven't had enough coffee to actually be impressive.

Ingredients
  

  • 1 loaf challah or brioche cubed (10–12 oz)
  • 3 ripe bananas sliced
  • 4 large eggs
  • 1 1/2 cups whole milk
  • 1/3 cup brown sugar packed
  • 2 tbsp butter melted
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • Pinch of salt
  • 2 tbsp dark rum or 1 tsp rum extract optional

Method
 

  1. Preheat oven to 350°F.
  2. Toss bread cubes and banana slices in a large bowl.
  3. Whisk eggs, milk, brown sugar, butter, vanilla, cinnamon, salt, and rum if using.
  4. Pour custard over bread and bananas, stirring to coat.
  5. Transfer to a greased 9-inch ovenproof skillet or baking dish.
  6. Press gently so bread soaks up custard and let sit 10 minutes.
  7. Bake uncovered 35–40 minutes until set and golden.
  8. Let cool 5 minutes before serving.
