5) White Bean and Kale Ham Soup

Servings: 6 servings

Ingredients
  

  • 1 ham bone or 2 c hams
  • 2 cups dried white beans soaked overnight
  • 1 onion chopped (about 1 cup)
  • 3 carrots sliced
  • 3 celery stalks sliced
  • 4 cups chicken broth
  • 4 cups water
  • 4 cups chopped kale ribs removed
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste

Method
 

  1. Wash the beans and add them to the slow cooker along with the broth and water.
  2. Include ham bone or chopped ham, onion, carrot, celery, bay leaves, and thyme.
  3. You can cook for either 8 hours on low, or 4 hours on high.
  4. Take the ham bone out, shred the meat, and put it back in the pot.
  5. Add kale and stir. Cook for another 15 to 20 minutes or until the kale wilts.
  6. Taste and season with salt and pepper.
