5) Two-Bite Peanut Butter Brownie Bites

Fudgy, fast, and dangerous in a crowd. I brought these to a playdate once and they were gone in ten minutes. Not exaggerating. One dad asked if they were from a bakery, and I told him yes just to keep some dignity.

Ingredients Method

Ingredients
  

  • 1/2 cup 115g unsalted butter, melted
  • 1/2 cup 100g granulated sugar
  • 1/3 cup 40g cocoa powder
  • 1/4 tsp salt
  • 1 large egg
  • 3/4 cup 90g all-purpose flour
  • 1/3 cup 80g creamy peanut butter, plus 2 tbsp for topping

Method
 

  1. Preheat oven to 350°F (175°C). Grease a mini muffin tin.
  2. Whisk melted butter, sugar, cocoa, and salt until smooth. Stir in egg.
  3. Fold in flour until just combined. Spoon batter into 24 mini cups, filling two-thirds.
  4. Bake 10–12 minutes until set. Cool 5 minutes in pan.
  5. Warm 2 tbsp peanut butter and drop a small dollop on each brownie. Cool fully before removing.
