5) Tuna Noodle Casserole with Roasted Garlic and Thyme

Ingredients
  

  • 8 oz egg noodles cooked and drained
  • 2 tbsp olive oil
  • 1 head garlic roasted (about 8–10 cloves)
  • 1 small onion diced
  • 2 tbsp butter
  • 3 tbsp all-purpose flour
  • 1 1/2 cups milk
  • 1/2 cup sour cream
  • 10 oz can condensed cream of mushroom soup
  • 12 oz canned tuna drained and flaked
  • 1 tsp fresh thyme leaves or 1/2 tsp dried
  • 1 cup frozen peas
  • 1 cup shredded cheddar
  • 1/2 cup panko breadcrumbs
  • Salt and pepper to taste

Method
 

  1. Roast garlic at 400°F for 25 minutes until soft, then squeeze cloves from skins.
  2. Sauté onion in olive oil until translucent, about 5 minutes.
  3. Melt butter, whisk in flour for 1 minute, then slowly add milk until thickened.
  4. Stir in roasted garlic, sour cream, cream soup, thyme, salt, and pepper.
  5. Fold in noodles, tuna, peas, and half the cheese. Transfer to a 9x13 pan.
  6. Top with remaining cheese and panko. Bake at 375°F for 20–25 minutes until bubbly and golden.
