5) Maple-sriracha sticky wings for sweet-heat lovers

Ingredients
  

  • 2 lb chicken wings tips removed and split
  • 1 tsp baking powder not baking soda
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp neutral oil canola or avocado
  • 1/4 cup pure maple syrup
  • 2 tbsp sriracha adjust to taste
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1 clove garlic minced
  • Sesame seeds and chopped scallions for garnish optional

Method
 

  1. Pat wings dry and toss with baking powder, salt, pepper, and oil until evenly coated.
  2. Preheat air fryer to 400°F (200°C). Arrange wings in a single layer; work in batches if needed.
  3. Cook 10 minutes, flip, then cook another 8–10 minutes until crisp and internal temp reaches 165°F.
  4. While wings cook, whisk maple, sriracha, soy, vinegar, and garlic in a small pan; simmer 2–3 minutes to thicken slightly.
  5. Toss hot wings in the glaze until sticky, then garnish and serve immediately.
