Method
- Heat a large non-stick skillet or wok over medium-high heat. Add a bit of oil if necessary.
- Add the diced chicken and frozen peas to the skillet. Cook for about 2-3 minutes, stirring occasionally, until the peas are warmed through and the chicken is slightly browned.
- Push the chicken and peas to one side of the skillet. Crack the eggs into the empty side of the skillet and scramble them until fully cooked.
- Add the cooked rice to the skillet. Pour the soy sauce over the top and stir everything together until well combined and heated through, about 3-4 minutes.
- Taste and add more soy sauce if needed. Serve hot and enjoy!
Notes
Using day-old rice helps to keep the fried rice from getting too sticky. Feel free to add other veggies you have on hand like carrots, bell peppers, or corn. This dish is perfect for meal prep and makes great leftovers!
