5) Crockpot Taco Soup with Ground Beef

Ingredients
  

  • 1 lb ground beef
  • 1 small onion diced
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can 15 oz diced tomatoes with green chiles
  • 1 can 8 oz tomato sauce
  • 1 packet taco seasoning or 2 tbsp homemade
  • 3 cups beef broth
  • 1 cup shredded cheddar
  • Salt and pepper to taste
  • Optional: tortilla chips sour cream, cilantro for serving

Method
 

  1. Brown ground beef with onion in a skillet, drain fat, and transfer to crockpot.
  2. Add beans, corn, tomatoes, tomato sauce, taco seasoning, and beef broth. Stir.
  3. Cook on low 4–6 hours or high 2–3 hours until flavors meld.
  4. Stir in shredded cheddar just before serving so it melts into the soup.
  5. Serve with chips, sour cream, and cilantro. Kids love dipping chips.
