4) Split Pea Soup with Ham

Ingredients
  

  • 1 pound dried split peas rinsed
  • 1 ham bone or 2 cups diced cooked ham
  • 1 medium onion diced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 2 garlic cloves minced
  • 8 cups chicken broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper

Method
 

  1. Add all ingredients to a large pot.
  2. Bring the soup to a boil, then reduce the heat.
  3. Cover and simmer for 1½ hours, stirring now and then, until the peas soften.
  4. Remove the ham bone and bay leaf. Shred any meat from the bone and return it to the pot.
  5. Add diced ham if needed. Taste and adjust the seasoning before serving.
