4) Southwest chorizo, pepper, and tot breakfast casserole

Ingredients
  

  • 1 lb fresh pork chorizo casings removed
  • 1 32 oz bag frozen tater tots
  • 1 medium red bell pepper diced (about 1 cup)
  • 1 medium green bell pepper diced (about 1 cup)
  • 1 small yellow onion diced (about 1 cup)
  • 8 large eggs
  • 1 cup whole milk
  • 2 cups shredded Monterey Jack cheese
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 2 tbsp chopped cilantro optional, for garnish

Method
 

  1. Preheat oven to 375°F. Brown chorizo in a skillet over medium, breaking it up; drain excess fat.
  2. Sauté onion and peppers in the same skillet until softened, about 5 minutes. Stir in cumin and paprika.
  3. Spread frozen tater tots in a greased 9x13 pan in an even layer.
  4. Scatter cooked chorizo and pepper mix over the tots. Sprinkle 1 cup cheese on top.
  5. Whisk eggs, milk, salt, and pepper. Pour evenly over the casserole.
  6. Top with remaining 1 cup cheese. Bake 35–40 minutes until set and golden.
  7. Let rest 5 minutes, then sprinkle cilantro if using and slice to serve.
