4. Loaded Baked Potato Soup

This tastes exactly like a loaded baked potato. It is rich, creamy, and always a huge hit after a long day of school and sports.
Servings: 4 servings

Ingredients
  

  • 3 pounds russet potatoes peeled and diced
  • 1 small onion finely chopped
  • 4 cups chicken broth
  • 1 package 8 ounces cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 6 slices bacon cooked and crumbled
  • Sliced green onions for garnish

Method
 

  1. Place the diced potatoes, onion, and chicken broth into the slow cooker.
  2. Cover and cook on low for 6 hours until the potatoes are very tender.
  3. Use a potato masher to lightly mash about half of the potatoes right in the pot to thicken the soup.
  4. Stir in the cream cheese, cheddar cheese, and sour cream until melted and smooth.
  5. Serve topped with crumbled bacon and green onions.
