4. Funfetti Sugar Cookies

Sprinkles make everything better. These are bright, cheerful, and hold up wonderfully at room temperature.

Ingredients
  

  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup rainbow sprinkles

Method
 

  1. Preheat oven to 350°F.
  2. Cream the butter and sugar together until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. Add the flour, baking powder, and salt. Mix until just combined.
  5. Gently fold in the rainbow sprinkles.
  6. Roll the dough into balls and place on a baking sheet. Flatten slightly with your hand.
  7. Bake for 8 to 10 minutes. Cool on a wire rack.
