4) Cheesy Taco-Stuffed Bell Peppers

Ingredients
  

  • 4 large bell peppers any color, tops cut off and seeds removed
  • 1 lb ground beef
  • 1 small onion diced (about 3/4 cup)
  • 1 packet taco seasoning or 2 tbsp homemade mix
  • 1 cup cooked rice white or brown
  • 1 cup canned diced tomatoes drained
  • 1 cup shredded cheddar or Mexican blend
  • 1/2 cup black beans rinsed (optional)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Chopped cilantro and sour cream for serving optional

Method
 

  1. Preheat oven to 375°F. Lightly oil a baking dish.
  2. Sauté onion in olive oil until soft, then add ground beef and cook until browned; drain if needed.
  3. Stir in taco seasoning, rice, tomatoes, and black beans; season to taste.
  4. Stuff peppers with beef mixture, top with cheese, and place upright in the baking dish.
  5. Cover with foil and bake 25 minutes; remove foil and bake 5 more minutes until cheese is bubbly.
  6. Let rest 5 minutes, then garnish and serve.
