30) Sour cream, onion, and tot loaded breakfast bake

This tastes like a tangy, savory morning casserole with a crispy tot top. I make it when weekends stretch into brunch or when scouts need feeding before practice. It’s simple, filling, and kids usually ask for seconds.

Ingredients
  

  • 1 32 oz bag frozen tater tots
  • 1 lb breakfast sausage cooked and crumbled
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green onions
  • 6 large eggs
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder

Method
 

  1. Preheat oven to 375°F. Grease a 9x13-inch baking dish.
  2. Spread half the tater tots in the dish to form a base.
  3. Mix cooked sausage, sour cream, 1/2 cup cheese, and green onions. Spread over tots.
  4. Whisk eggs, milk, salt, pepper, and onion powder. Pour over the sausage layer.
  5. Top with remaining tots and sprinkle the rest of the cheese.
  6. Bake 35–40 minutes until eggs set and tots are golden. Let sit 5 minutes, then slice.
