30-Minute Tex-Mex Beef and Rice

Ingredients
  

  • 1 lb ground beef
  • 1 cup uncooked white rice
  • 1 cup salsa your favorite brand
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup water
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • Fresh cilantro chopped (optional)
  • Sour cream optional

Method
 

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Add the uncooked rice, salsa, black beans, corn, water, chili powder, cumin, salt, and pepper to the skillet with the beef.
  3. Stir everything together until well mixed, then bring to a boil.
  4. Once boiling, reduce the heat to low, cover, and let simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  5. Remove from heat and sprinkle the cheddar cheese on top. Cover again for a couple of minutes until the cheese is melted.
  6. Garnish with fresh cilantro and a dollop of sour cream if desired.
  7. Serve hot and enjoy your quick, zesty Tex-Mex meal!

Notes

Feel free to add more veggies like bell peppers or onions for extra flavor and nutrition. You can use brown rice instead of white rice, just adjust the cooking time as needed. This dish is perfect for meal prepping—store leftovers in individual containers for easy lunches!
