30) Apple-Cinnamon Rice Pudding

This tastes like cozy comfort in a bowl. I make it on busy evenings when I need something warm and easy that kids will eat without groaning. It holds up well for leftovers, so I can reheat a portion while juggling homework and soccer gear.

Ingredients
  

  • 1 cup short-grain rice like Arborio, rinsed
  • 4 cups whole milk
  • 1/3 cup sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 large apple peeled and diced
  • 1 tbsp butter
  • Pinch of salt

Method
 

  1. Melt butter in a medium pot over medium heat. Add diced apple and cinnamon, cook 3 minutes until slightly softened.
  2. Stir in rice, milk, sugar, and salt. Bring to a gentle simmer.
  3. Lower heat and cook, stirring often, 25–30 minutes until rice is tender and mixture thickens.
  4. Remove from heat and stir in vanilla. Taste and add more cinnamon or sugar if needed.
  5. Serve warm or chill. It keeps 3–4 days in the fridge.
