3) Rainbow Layer Cake with White Frosting

Ingredients
  

  • 3 cups all-purpose flour
  • 2 1/4 cups granulated sugar
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 cup unsalted butter softened (226 g)
  • 1 cup whole milk room temp
  • 4 large eggs room temp
  • 2 tsp vanilla extract
  • Gel food coloring red, orange, yellow, green, blue, purple
  • 4 cups vanilla buttercream store-bought or homemade

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line six 8-inch round pans or bake in batches using two 8-inch pans.
  2. Whisk flour, sugar, baking powder, and salt in a bowl. Beat butter until creamy, add eggs one at a time, then vanilla.
  3. Alternate adding dry mix and milk, starting and ending with dry mix. Divide batter into six equal bowls.
  4. Tint each bowl a different color with gel food coloring. Pour into pans and bake 12–14 minutes, or until a toothpick comes out clean.
  5. Cool layers 15 minutes in pans, then on a rack. Trim domes if needed for flat stacking.
  6. Stack layers with a thin coat of white buttercream between each. Crumb-coat, chill 15 minutes, then finish with a smooth white layer.
