Ingredients
  

  • 8 cups cubed day-old brioche or challah about 1 loaf
  • 4 large eggs
  • 2 cups milk
  • 1/3 cup creamy peanut butter
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 cup crushed graham crackers or crisp rice cereal
  • 1/2 cup strawberry jam

Method
 

  1. Preheat oven to 350°F and grease a 9x13 pan.
  2. Whisk eggs, milk, peanut butter, maple syrup, vanilla, and salt until smooth.
  3. Toss bread cubes in the pan and pour the egg mixture over them.
  4. Spoon jam in dollops across the top and gently swirl with a knife.
  5. Sprinkle crushed graham or cereal evenly over the casserole.
  6. Bake uncovered for 35–40 minutes until set and slightly golden.
  7. Let rest 10 minutes before slicing.
