3) Maple Dijon Pork Tenderloin

Ingredients
  

  • 1.5 lb pork tenderloin trimmed
  • 1/3 cup pure maple syrup
  • 2 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Method
 

  1. Whisk maple syrup, Dijon, vinegar, garlic, paprika, salt, and pepper in a bowl.
  2. Rub pork with olive oil and place in slow cooker.
  3. Pour sauce over pork, turning to coat.
  4. Cook on low for 3–4 hours or high for 1.5–2 hours until internal temp reads 145°F.
  5. Lift pork out, let rest 5 minutes, then slice. Spoon sauce from the cooker over slices.
