21) Vanilla-Poached Apples with Granola

Ingredients
  

  • 4 medium firm apples Honeycrisp or Gala, peeled, cored, halved
  • 2 cups water
  • 1/2 cup sugar
  • 1 vanilla bean split (or 1 tsp vanilla extract)
  • 1 tbsp lemon juice
  • 3/4 cup granola your favorite
  • 2 tbsp butter optional
  • Pinch of salt

Method
 

  1. Combine water, sugar, vanilla, and lemon juice in a saucepan and bring to a simmer.
  2. Add apple halves, cut side down. Simmer gently 8–10 minutes until tender but not mushy.
  3. Remove apples with a slotted spoon. Keep poaching liquid warm.
  4. Stir butter and a pinch of salt into the liquid to make a thin syrup, if using.
  5. Plate apples, spoon syrup over them, and sprinkle granola on top.
  6. Serve warm or room temperature. Kids eat them with spoons; adults might want a dollop of yogurt.
